Sauvignon Blanc

The crisp nose of prickly pear, green fig and white asparagus and the mineral aftertaste reflects the gentle sea breeze blowing though the vines during the day. With the smell of virility and the experience of the earth.

Near the most southern point in Africa (Cape L’Agulhas), with a consistent mild climate resulting in low yield and promotes this wines quality. Harvested before sunrise in 10kg lug boxes, hand-sorted and crushed with 8 hours of skin contact. Lees contact for 2 months after fermentation, stabilized and bottled.

Serving suggestion: A wine for summers day, light food and salads.

Rosé smg

With the absence of harshness or hurry this Rose was born with its lovely light pink colour combined with the bursting aromas of ripe strawberry, mulberry and blackberry is softly rounded on taste with a dry finish. Heavy clay soils and the dry African summers result in slow growing vines that produce this exceptional rose.

Grapes were harvested from selected blocks. Grapes were destemmed, slightly crushed and left on the skins for a minimum time to achieve the trademark rosé colour. Fermenting as one, this blend was left on the fine lees for ±4 months prior to preparation for bottling.

Serving suggestion: This is bottled freshness for a perfect summers day!

Chardonnay

Caramel toffee and fudge with a crispness of citrus and tropical fruit. A good structured wine ending off in a mouth-watering long lingering finish. This Chardonnay following the sun from dusk till dawn with its east to west planted rows resulted in the ability to be kissed by our African sun and optimizing its ripe flavors.

With the luxury of time for detail, these grapes were hand-harvested at the break of early morn in 10kg lug boxes, hand-sorting and whole bunch pressing. The juice was transferred into 300Lt French oak barrels. Naturally fermented under controlled temperatures of 14 °C. The wine matured for 7 months on the lees racking only twice before bottling.

Serving suggestion: This wine will complement most shellfish and seafood.

Malbec

Sweet ripe fruity aromas of mulberry and cherries. On taste the elegant structure is supported by freshness and wood, with leather and tobacco undertones.

The vineyard is constantly exposed to 50% lower temperatures during the night as during the day
Struggling vineyard set in very rocky soils with extremely low yields delivering the best fruit.
Harvested at in 10kg lug boxes this Malbec was naturally fermented on its skin, racked into a 1000lt barrel to complete Malolactic Fermentation, and matured for 22months, only racking it twice before bottling.

Serving suggestion: Holds up to pasta, dark meat, and leaner cuts.

Shiraz

Sweet ripe fruity aromas of cherries, dark plum and cassis. On taste the elegant structure is supported by wood and white pepper flavour. Time has yet no time set. Establishing this vineyard on the ancient rocky riverbed of the Breede River, dating back almost 14 milion years, was not an easy task, but with dedicated labour this wine resulted in a very terroir driven Shiraz. Constantly 50% lower night temperatures as during the day.

Harvested at optimum ripeness, this Shiraz was naturally fermented on its skin for 10days, left on its skin till malolactic fermentation was done and racked into 300lt French oak barrels for 12 months.

Serving suggestion: Will compliment leaner red meat, stew, and mildly spicy ethnic foods.

Touriga Nacional

Floral and berry fruits, with hints of spice and dark chocolate. Fine tannins, smooth with an enjoyable acidity.

Fresh mountain water on virgin soil and unspoiled and healthy microbes, makes the perfect medium for this red grape. Planted in rocky clay soils.

Considered as Portugal’s finest, Touriga Nacional is quite at home here at Olivedale, with constantly 50% lower temperatures during the night as during the day, especially in the summer.
Picked in 10kg lug boxes at the end of February to early March, the grapes were hand-sorted and destemmed but not crushed. Whole berry natural fermentation with extended skin contact. Through malolactic fermentation, pressed and racked into 300lt French oak barrels for 22 months.

Serving suggestion: This wine will complement grilled or smoked meat dishes, tripe and rich seafood.

Tempranillo

This is a harmonizing wine with a superior structure. Lovely soft spice with hints of scorched marshmallow and soft vanilla. Fresh mountain water on virgin soil and unspoiled and healthy microbes, makes the perfect medium for this red grape. Tempranillo found its home at Olivedale, with its very unique Mediterranean summer days and cooler nights. Constantly 50% lower temperatures during the night as during the day.

Picked in 10kg lug boxes at the end of February, the grapes were hand-sorted and destemmed but not crushed. Whole berry natural fermentation with extended skin contact. Through malolactic fermentation, pressed and racked into 300lt French oak barrels for 18 months.

Serving suggestion: This wine will complement rich red meat dishes.
