Through malolactic fermentation, pressed and racked into tank for further lees contact. Bottled on site under watchful eyes 160 days after harvest. This low sulphur wine is the result of minimum interference, reductive procedures, and clever use of natural tannins.

Cold macerated for 3days at low temperature of 10ºC until natural fermentation starts, and a CO2 blanket protects the juice. Grapes is then pressed into 500 and 600lt 3rd fill barrels to finish its first and second fermentation. Racked from its lees and returned to barrel for aging.

Sweet honey, tropical guava and tangerine nose with a lively acid, rolling smoothly over the tongue, with the softness of silence.
